Inspired by a trip to Czechia, we decided take our first crack at one of the most iconic beer styles in history: the Czech pale lager. Ours has an 11° starting gravity and is hopped continuously with some killer Czech Saaz we were able to acquire through our new contacts there.

Our Classic Plzeň is all about balancing the soft, bready malt, floral/spicy noble hops, and a firm, clean bitterness with a crisp finish, which makes it incredibly food-friendly.

Carbonation and bitterness slice through oil and fat, and lighten plates like fried chicken and fish & chips, while the slight bitterness can balance the richness of a creamy brie or camembert.

Since it has "Classic" in the name, you can never go wrong with pairing Plzeň with pork dishes: schnitzel, mild sausage, and charcuterie are all well-supported by the malt base and the fats are cut with the gentle bitterness.

In early 2024, our merry band of brewers embarked on a quest for brewing enlightenment. Their destination? The centre of brewing mastery, The Czech Republic, where the crisp, golden elixir known as Pilsner was born.

Our brewers soaked in the sights, sounds, and, most importantly, the tastes of Czech brewing traditions. Armed with the knowledge and wisdom gained on their journey, they returned to South Etobicoke transformed and inspired to make this Classic Pilsner.
