This version of our mixed-fermentation farmhouse ale spent almost a year fermenting in stainless steel with our house blend of brettanomyces before fermenting for another three months on whole Montmorency cherries. Once the beer was packaged in underwent a final four-month fermentation in the cans and kegs, creating the champagne-like carbonation that is one of the hallmarks of the style. The beer itself is a showcase for the cherries themselves, with secondary notes of tropical fruit, funk, and even a slight hint of cinnamon. This is a special beer!
This farmhouse ale isn't the same as it was when it began. It has since made a long journey of many twists and bends and has flowed through many processes. From Foeder fermenting, to flowing through fresh Montmorency cherries, then can conditioning (making it extra lively), this saison is a different river.
